The ingredients needed to make Punjabi chicken:
  1. Prepare 750 grams chicken
  2. Make ready 5 onions roughly chopped
  3. Take 10-12 garlic colves
  4. Take 1 inch ginger
  5. Get 2 tbsp ginger garlic paste for marination
  6. Get 2 tbsp shaahi jeera
  7. Get 6 cloves
  8. Make ready 3 small cinnamon sticks
  9. Take 1 big cardamom
  10. Take 4 small cardamoms
  11. Make ready 2 bay leaves
  12. Prepare As required Few whole peppercorn seeds
  13. Prepare 2 tomatoes roughly chopped
  14. Make ready 2 tbsp roasted cumin powder
  15. Get 1/2 cup fresh coriander leaves
  16. Prepare 3 tbsp coriander powder
  17. Make ready 1 1/2 tbsp Garam masala powder
  18. Prepare 2 tbsp crushed kasuri methi
  19. Take 3 tbsp turmeric powder
  20. Take 2 tbsp Red chilli powder for marination
  21. Make ready 1/2 cup lime juice for marination
  22. Get as required Mustard oil/ refined oil
  23. Make ready as required Ghee
  24. Take 2 tbsp Kashmiri red chilli powder

This is my own version of recipe which tastes equally good. Chicken on the bone cooked till tender in a simple spicy punjabi style onion tomato style gravy. Punjabi chicken masala gets its authentic Punjabi taste from the special garam masala which is used in the preparation. Prepare this authentic chicken recipe at home and enjoy the flavour of Punjab.

Steps to make Punjabi chicken:
  1. Marinate the chicken with salt, 2 tbsp red chilli powder, 1 tbsp turmeric powder, 2 tbsp ginger garlic paste, half cup lime juice and a bit of mustard oil. Keep it for 1 hour. Shallow fry the chicken so that they r cooked from outside (not inside) for two minutes.
  2. Heat oil in a pan. Add 2 bay leaves, 2-3 very small cinnamon sticks, black peppercorn seeds, 2 tbsp shahi jeera, 1 big Elaichi, 4 small Elaichi, 5-6 cloves. Let it splutter for sometime. Add 5 onions, 10-12 garlic cloves,1 inch ginger roughly chopped. Fry till the onions turn translucent. Now add 2 roughly chopped tomatoes. Add salt. Also add half cup fresh coriander leaves. Cook till the tomatoes are softened and leave oil. Blend these into a fine paste.
  3. In a pan, add 2 tbsp ghee with the remaining oil used to fry the chicken. Add 2 tbsp Kashmiri red chili powder. Then add the paste and cook for few mnts. Now add 2 tbsp roasted cumin powder (this is imp. Use roasted cumin powder only), 3 tbsp coriander powder, 1 tbsp turmeric powder, 1 T spoon sugar. Continue cooking until the masala blend with the paste perfectly.
  4. Now add the fried chicken, cover the lead and cook it in low flame for 15 mnts. Once the chicken is partially cooked, add 1 cup water, 2 tbsp kasuri methi, 1 tbsp garam masala powder and cook it in low flame until the chicken softens. Adjust the salt here if required.
