Allow it to cool. - - Make a purée, if you like smooth texture of the sauce. - OR - - Chop them coarsely, if you like chunky texture of the sauce.
  2. Heat olive oil and butter in the pan. Add garlic and finely chopped onion to it. Sauté it for 1-2 minutes or until the raw smell is gone.
  3. Add tomato purée/coarsely chopped tomatoes, chilli flakes, oregano,salt, sugar, kashmiri red chilli powder and ketch up. Mix it well and cook on a low flame for about 20 minutes or until you get desired thickness.
  4. Once cooled down completely, store it in an airtight container. It remains fresh for 7-10 days when stored in refrigerator and a month when stored in freezer.
