Instructions to make Chainsoo:
  1. First of all dry roast whole udad in a pan for 5 to 7 minutes on medium heat. After it cools down, grind it into a coarse powder.
  2. Heat oil in a pot and add whole coriander, kalonji, dry chilli and bay leaf. Saute it for a few seconds and add ginger garlic paste and chopped onion. Let it become light pink then add udad powder to it and mix everything well. Roast it on medium heat for 2 to 3 minutes.
  3. Now add 2 cups of water while mixing so that there are no lumps in the dal. Cover and cook it for 15 to 20 minutes on medium to low heat. Now add turmeric, red chilli powder, garam masala and salt to it and cook it for another 5 to 7 minutes or until it is cooked. Keep stirring in between so that it does not stick to the pot.
  4. Drizzle with ghee and sprinkle some fresh coriander leaves at the time of serving. Chainsoo can be served with roti and rice.
