Place the coffee in a bowl and mix wth boiling water n stir and put to one side n let them cool. - In a separate bowl beat together the egg yolks and sugar for about three minutes until thick and pale. - Add the mascarpone and beat until well mixed. Fold in the whipped cream gently with a metal spoon.

  4. Smooth the surface and dust the top with the cocoa powder. - Refrigerate for about two hours or until firm. The longer it is left, the more the flavours will develop.

The filling starts with a zabaglione — which is a fancy name for egg yolks whisked with sugar and marsala wine (or rum, in our case) over a double-boiler until light, pale and foamy. This zabaglione establishes the flavor of the whole dish. Tiramisu is a timeless no-bake Italian dessert combining espresso-dipped ladyfingers and a creamy lightly sweetened mascarpone cream.
